Blender’s Notes Pomenade:

Sencha Green tea can be sourced from both China and Japan.   Contrary to Japan, China has refined the art of processing tea leaves in many different ways – from roasted, rolled oolong tea, to the smoke of Lapsang – by techniques handed down through the generations.  Chinese Green Teas are generally sweeter with a toasty lively and bursting with delicate spring flavor.  Japanese ones are often vegetal and brisker, often bitter if over-brewed.  It is especially evident in the Sencha Green Tea.

In the processing of Chinese green tea, the leaves become slightly fermented. … Instead, Japanese green tea tends to taste sweeter than Chinese green tea. (Contrarily, Japanese green tea also contains more chlorophyll, which some green tea drinkers find too “grassy” for their tastes.). Japanese green teas are traditionally steamed, while the Chinese ones are pan-fired. Steaming gives a different flavor profile and color. Moreover, steaming or pan-firing influence the amount of EGCG, a catechin abundantly found in green tea. Furthermore, Japanese green teas are generally not withered, which is an important step in producing Chinese teas. 

One of our most popular Green Teas.  We have combined Chinese Sencha Green Tea with pieces of Freeze Dried Sour Apple and Lemon to ensure the “Ade” in Lemonade and Limeade!  We added in Hibiscus and Pomegranate to give it a nice sweetness at first before the essence of Ade follows thru at the end!  Fantastic Iced!

Rooibos is a very unique type of tea...and it actually isn’t a part of the Camellia Sinensis plant at all.  Rooibos comes from a shrub Aspalathus linearis that  is a part of the legume family (e.g. peas, beans and peanuts) and grows to about four feet high and looks like a sagebrush. Since the 1700’s, Rooibos has been grown primarily from the mountainous Cederberg region of South Africa's Western Cape.  This tea will have slightly red color and will have a slightly sweet taste.

Most of the harvest for Rooibos is done during the Summer months.  The two types of Rooibos are Green and Red. The Green Rooibos is simply a plucked leaf that is dried and packaged.  This has a more mild taste and a beautiful green color. The most popular is Red Rooibos (its namesake) and is plucked, fermented and oxidized giving it its rich red color.  This version is a very creamy and sweeter taste. However, both versions of Rooibos have their own set of antioxidants and offer many health benefits.

Pu erh is also very forgiving when steeping, you can steep the leaves with boiling water for 10 minutes or several hours because it will not get bitter.  The flavor of Rooibos will get richer and creamier with longer steep times.
