Limited Supply Summer Tea

Blenders Notes Grape Neeeee-Hi:

In this new summer blend we combined the amazing Pai Mu Tan 2 – Leaf Chinese White tea with soft flavor with Sencha Chinese Green tea with fresh flavor. This combination of teas make a very unique base that holds other flavors well.  We added in pieces of freeze dried Purple Grapes, Dried Black Currant and freeze dried Blackberry slices.  These three fruits gave this blend a wonderful “Grape” taste.  It reminded us of the Grape Pop that Walter “Radar” O’Reilly loved to drink on the TV show Mash…(that tells you how old we really are!).  To the great taste we added in some Pea Flowers which don’t flavor the drink but will steep a vivid dark purple color.  The tea looks at tastes like a perfect cup of Grape without anything artificial included.  A perfect drink for the little ones in your family!

When talking about the many types of tea, Green tea is the most common and the most recognized tea beverage and it is the easiest to find.  The primary countries that export Green Tea are Japan – lighter green teas and China – darker more robust green teas where for both countries Green Tea is a celebrated beverage!  We carry a full line of teas from both countries. We have lots of selection and the customer can choose the strength level they prefer in their tea. Much of the differences in the strength of Green Tea does come from processing of the lea leaves.

The teas from Japan are usually milder in flavor and produce a faint tan cup of tea and are machine processed.  If you are new to the tea world – Japanese green teas are lighter on the palate and are a great place to start. The teas from China tend to be stronger and more astringent that those from Japan and are hand processed.  We pair many of our stronger flavors with the Chinese green teas. The Peach and Mint combos we have are done with a strong Gunpowder Green tea allowing the flavors to balance when making a cup of tea. We don’t want the flavor of the tea to supersede the wonderful taste of the high quality green tea it is paired with.

Many of the tea leaves will go through a steaming or pan firing process.   This process will stop oxidation and keep them in the Green Tea Family. Then the leaves are dried in large rollers or fan belts bringing you the final distinctive product depending the tea you choose.  The tea leaves will have a beautiful green color and will have some texture and suppleness to the leaves. We carry Sencha, Dragonwell, Gunpowder and Kukicha as a few options.

When talking about the many types of tea, White tea is not as mainstream as the other types but has the most health benefits of the tea choices.  It is a lightly processed (no rolling or roasting) tea leaf where it is mostly cleaned and dried and contains the most antioxidants of the tea family.    White tea comes primarily from China  but we also get a few of our stock supplies from Sri Lanka – especially or Silver Tips.

White tea can take on two forms. The first is the tea bud (unopened tea leaves) where the exterior is covered in very fine and tiny hairs making it downy looking and a sign of good quality…The second is White Peony leaf or Pai Mu Tan or Bai Mu Dan which has green-gray colored first leaf and sometimes the second leaf with the bud of the plant making a very light colored and flavored cup of tea.

Manufacturing of white tea is usually done in the following order according to our suppliers in China and Sri Lanka – Fresh tea leaf and bud (unopened tea leaf) is picked – then it will be withered or air dried.  It is that simple…not much processing leaving it in its most natural form.
