Blenders Notes Hojicha (Hōjicha):

Hojicha (Hōjicha) is a Japanese green tea. It is distinctive from other Japanese green teas because it is roasted in a porcelain pot over charcoal. It is roasted at 150 °C (302 °F) to prevent oxidation and produce a light golden colour, as opposed to other Japanese teas which are steamed. In general, the base of a hōjicha consists of leaves from the second harvest or after.  Once infused, hōjicha has a nutty, toasty, sweet flavor. The tea has little to no bitterness.  The process of making hōjicha was discovered in 1920 by accident when a Kyoto merchant had unsaleable bancha. By roasting the bancha, the merchant created a new flavor; hōjicha. Hōjicha is often made from bancha tea from the last harvest of the season. However, other varieties of hōjicha also exist, including a variety made from sencha and kukicha. Kukicha (also known as bōcha or ‘twig tea’) is made primarily from the twigs and stems of the tea plant rather than the leaves alone. Hōjicha infusions have a light- to reddish-brown appearance and are less astringent. The lower levels of astringency in hōjicha are due to the tea losing catechins during the high-temperature roasting process.  The roasted flavours are extracted and dominate this tea: the roasting replaces the vegetative tones of other varieties of Japanese green tea with a toasty, slightly caramel-like flavour. The roasting process used to make hōjicha also lowers the amount of caffeine in the tea. Because of its mildness, hōjicha is a popular tea to serve during the evening meal, before sleep, and preferred for children and the elderly.  Hōjicha – Wikipedia

When talking about the many types of tea, Green tea is the most common and the most recognized tea beverage and it is the easiest to find.  The primary countries that export Green Tea are Japan – lighter green teas and China – darker more robust green teas where for both countries Green Tea is a celebrated beverage!  We carry a full line of teas from both countries. We have lots of selection and the customer can choose the strength level they prefer in their tea. Much of the differences in the strength of Green Tea does come from processing of the lea leaves.

The teas from Japan are usually milder in flavor and produce a faint tan cup of tea and are machine processed.  If you are new to the tea world – Japanese green teas are lighter on the palate and are a great place to start. The teas from China tend to be stronger and more astringent that those from Japan and are hand processed.  We pair many of our stronger flavors with the Chinese green teas. The Peach and Mint combos we have are done with a strong Gunpowder Green tea allowing the flavors to balance when making a cup of tea. We don’t want the flavor of the tea to supersede the wonderful taste of the high quality green tea it is paired with.

Many of the tea leaves will go through a steaming or pan firing process.   This process will stop oxidation and keep them in the Green Tea Family. Then the leaves are dried in large rollers or fan belts bringing you the final distinctive product depending the tea you choose.  The tea leaves will have a beautiful green color and will have some texture and suppleness to the leaves. We carry Sencha, Dragonwell, Gunpowder and Kukicha as a few options.
