Kukicha or twig tea, also known as bōcha (棒茶), is a Japanese tea blend made of stems, stalks, and twigs of the tea plant – no leaves! Kukicha has a unique flavour and aroma among teas, due to it being composed of parts of the plant that are excluded from most other teas. It mostly comes from the processing of Sencha or Matcha when the stems and twigs are left behind. After the steaming and drying process of Japanese Sencha, leaves are separated based on colors. Sencha is dark green leaves, and Kukicha has light green stems, etc. These are separated either by labor or sorting machines. While brewing, it also takes a longer time than Sencha and has a less bitter taste than Sencha and a more refreshing aroma, which is why it is preferred over many other green teas for daily intake. Tea leaves and stems have the same nutrient called Theanine, which gets equally bitter and turns into catechin when exposed to as much sunlight. Leaves always receive more sunlight then stems; therefore, Sencha has more astringent notes than Kukicha. Aside from this, Sencha plant is grown and mature for at least three years, and then its four sorts of stems, twigs, and stalks are harvested to make Kukicha. Kukicha tea has a unique aroma and taste compared to other green teas due to its being composed of other parts of the tea plant that are not included in the most teas. Kukicha is considered a second-grade tea because it is not the general green tea form. It is mostly for personal use and not for offering guests, to whom you must like to present high-grade tea.
Kukicha tea is beneficial to your body, just like any other green tea. However, it does not contain theine but has many antioxidants. It is an alkalizing drink that neutralizes the acidity in your stomach. Tannins present in tea help digestion of grains and vegetables by speeding up the process and benefiting your body with every vitamin and nutrient. When talking about the many types of tea, Green tea is the most common and the most recognized tea beverage and it is the easiest to find. The primary countries that export Green Tea are Japan – lighter green teas and China – darker more robust green teas where for both countries Green Tea is a celebrated beverage! We carry a full line of teas from both countries. We have lots of selection and the customer can choose the strength level they prefer in their tea. Much of the differences in the strength of Green Tea does come from processing of the lea leaves.
The teas from Japan are usually milder in flavor and produce a faint tan cup of tea and are machine processed. If you are new to the tea world – Japanese green teas are lighter on the palate and are a great place to start. The teas from China tend to be stronger and more astringent that those from Japan and are hand processed. We pair many of our stronger flavors with the Chinese green teas. The Peach and Mint combos we have are done with a strong Gunpowder Green tea allowing the flavors to balance when making a cup of tea. We don’t want the flavor of the tea to supersede the wonderful taste of the high quality green tea it is paired with.
Many of the tea leaves will go through a steaming or pan firing process. This process will stop oxidation and keep them in the Green Tea Family. Then the leaves are dried in large rollers or fan belts bringing you the final distinctive product depending the tea you choose. The tea leaves will have a beautiful green color and will have some texture and suppleness to the leaves. We carry Sencha, Dragonwell, Gunpowder and Kukicha as a few options.
