Blender’s Notes Raspberry Riches:

Some teas you drink; others have a story behind every leaf. Ti Kuan Yin, also known as Tieguanyin or “Iron Goddess of Mercy,” is one of China’s most celebrated oolong teas, originating in Anxi County in Fujian Province. Known for its tightly rolled leaves and beautiful orchid-like fragrance, Tieguanyin can range from fresh, green, and floral to deeper, warmer, and more roasted depending on how it is processed.

Part of Tieguanyin’s charm comes from the legends surrounding its beginning. Two traditional stories have been passed down, commonly known as the Wei and Wang legends. While they differ in their details, both connect this remarkable tea to Guanyin, the Bodhisattva of Compassion, from whom the tea takes its famous name. These stories remain an enduring part of Tieguanyin’s cultural history, even though they are legends rather than settled historical fact. And perhaps that little bit of mystery is fitting, because there is something rather enchanting about watching this tea come to life. Tieguanyin is an oolong, meaning it is partially oxidized rather than processed completely like either a green or black tea. The leaves undergo an involved process that includes withering, controlled oxidation, and rolling, eventually forming the beautifully curled leaves associated with this style of tea. Depending on the degree of oxidation and roasting, Tieguanyin can become delicate and floral or darker, toastier, and more complex.

The Tieguanyin we selected comes from Anxi in Fujian Province, the historic home of this beautiful oolong. It has the delicate floral character Tieguanyin lovers look for, with an aroma often compared to orchids and a wonderfully smooth mouthfeel. Quality Tieguanyin can also reveal creamy, mineral, fruity, and sometimes berry-like nuances beneath those florals. We added pieces of raspberry to complement the oolong’s naturally delicate fruitiness, and that is where this tea develops an entirely different personality. The raspberry brings a bright, juicy, sweet-tart character to the cup. That familiar little raspberry tang wakes up the softer floral notes of the Ti Kuan Yin, while the tea’s velvety body keeps the fruit from becoming sharp or overpowering. Take your first sip, and you’ll notice the oolong itself, smooth, floral, and quietly elegant. Then the raspberry blooms across the palate with a burst of ripe berry sweetness and just enough tartness to keep the cup fresh and lively. As the tea settles, the fruit and floral notes mingle together, leaving a soft, lingering finish that’s almost like wandering between an orchid garden and a raspberry patch. It’s sophisticated enough for the serious oolong drinker, but fruity and approachable enough for someone who thinks they aren’t quite ready for an oolong yet. And while it’s lovely served hot, this one absolutely begs to be tried iced. Chilled, those raspberry notes become even brighter and more refreshing while the Tie Guan Yin provides a smooth, elegant tea finish. Ancient Chinese tea tradition meets a wonderfully juicy little raspberry. And honestly, we think they were meant to meet.

When talking about the many types of tea, Oolong is a fun tea falling in between Green and Black Tea depending on how much it is oxidized.  The primary countries that export Oolong are China (mainstream) and Taiwan (high end) teas. We carry mostly Green Oolong from China in our blends because it pairs well with the fruits we add to the teas.  We also carry some speciality Oolongs from Taiwan.

The original origin of Oolong is from high elevation regions where the mountains are rocky with cooler temperatures.   The leaf is left unfermented making it a green Oolong or it may be fully oxidized making it a Black Tea. Either way this tea leaves a fresh golden after taste in the mouth!  Wonderful and unique flavor.
