Blender’s Notes Pepper Lover’s Chai:
What is Chai? The name “chai” is actually the Hindi word for “tea”, which was derived from “cha”, the Chinese word for “tea”. In this case, the Hindi term chai means a mix of spices steeped into a tea-like beverage. Chai (pronounced as a single syllable and rhymes with ‘pie’) is the word for tea in many parts of the world. It is a centuries-old beverage which has played an important role in many cultures.
This version of chai contains lots of spice with the freeze-dried peppers and peppercorns. We started this blend with High Quality Dark tea from China called Pu-erh. This fermented black tea creates such a strong base to this blend allowing the true taste of the peppers to shine through. With this we also added in an Aged Assam Tea from India and a caffeine-free Red Tea from Africa. We find that the facets of these individual teas give such a great flavor combo that the tea would fall flat without all these blends. With this combination we freeze-dried Serrano ~ Habanero ~ Poblano ~ Sweet Peppers to give this blend a spicy combo with all the naturals colors of the peppers. To this we added several kinds of peppercorns including Rainbow Peppercorns and Sichuan. The cup of tea this produces is nice and warm – a bit of spice and a fantastic combination with milk is added. Rooibos is a very unique type of tea…and it actually isn’t a part of the Camellia Sinensis plant at all. Rooibos comes from a shrub Aspalathus linearis that is a part of the legume family (e.g. peas, beans and peanuts) and grows to about four feet high and looks like a sagebrush. Since the 1700’s, Rooibos has been grown primarily from the mountainous Cederberg region of South Africa’s Western Cape. This tea will have slightly red color and will have a slightly sweet taste.
Most of the harvest for Rooibos is done during the Summer months. The two types of Rooibos are Green and Red. The Green Rooibos is simply a plucked leaf that is dried and packaged. This has a more mild taste and a beautiful green color. The most popular is Red Rooibos (its namesake) and is plucked, fermented and oxidized giving it its rich red color. This version is a very creamy and sweeter taste. However, both versions of Rooibos have their own set of antioxidants and offer many health benefits.
Pu erh is also very forgiving when steeping, you can steep the leaves with boiling water for 10 minutes or several hours because it will not get bitter. The flavor of Rooibos will get richer and creamier with longer steep times.

For many people who are new to tea, Black Tea can be one of the first options because it has such a full flavor and color, and it is easy to modify.
